Wix is a general-purpose website builder covering every kind of site, from a restaurant page to a portfolio, with commerce as one of many things it can do. Its drag-and-drop editor gives more freedom over layout than Crate's does. Crate does only commerce, which is why its stock counts, order states, staff permissions, till and payouts are deeper, and why its channels include chat and social natively. The trade is real in both directions: Wix gives you more layout freedom and a shallower operations layer, and Crate gives you a narrower set of design choices, all of them already correct on a phone, and an operations layer that is the whole product.

Because every option is a way for the page to be wrong on a 360px screen, which is the screen most of your customers are on. The themes constrain layout so that outcome is not available.
